Jiffy Corn Casserole

 

our small group is having a Thanksgiving dinner tonight. which is a great excuse for me to make one of my favorite Thanksgiving side dishes - corn casserole! it is not healthy for you in the slightest, but it is super delicious! i doubled the recipe & used a 9x13 pan, so if you want to make the original recipe (serves 6-8) just cut my ingredients in 1/2 & cook it in a 9x9 pan for 55-60 minutes.


Jiffy Corn Casserole
 

ingredients:
2 cans whole kernel yellow corn, undrained
2 cans cream style yellow corn
16 oz. sour cream
4 eggs, beaten
2 boxes Jiffy corn muffin mix
2 sticks butter, melted (yikes!)
9x13 casserole dish


step 1: cut up your butter sticks into small chunks & microwave for 1 1/2 - 2 minutes to melt.
step 2: pour everything into a large mixing bowl & mix together well.
step 3: lightly oil your casserole dish & pour the ingredients in.  
step 4: bake at 350 degrees for 65-75 minutes. (ovens vary, so if you are unsure, use a toothpick to check if the casserole is done in the middle)  
step 5: enjoy the most delicious Thanksgiving side dish ever!

  3. this is normally used as a side dish for about 15-20 people. i would probably triple it if you're using for 50 people!

    I made this today for Thanksgiving and I followed the directions but it looked too much for the 9x13 unless it is supposed to come all the way to the top. I used a 10 x 15 and it left about an inch from the top. In the oven now and smells wonderful. I usually adapt recipes but I have a feeling this one will be perfect including the 2 sticks of butter and I even used the undrained corn...after all it is Thanksgiving and I am thankful for this recipe.

  5. when we make it, it does come all the way to the top! we don't have anything bigger than 9x13 but i bet it does wonderful in a 10x15! i am glad you tried it! i hope it was super delicious!! :)
