White Chicken Chili

cold weather is in...which means it is soup & chili season! one of my husband & i's favorite chili is white chicken chili. we made it over the weekend & i wanted to share it with you because it's a great winter meal! it's super easy to make & super delicious!
White Chicken Chili

McCormick white chicken chili seasoning mix
14oz chicken broth
1 can great northern beans (drained)
2 cans kidney beans (drained)
2 large 12.5oz chicken canned
1 10oz can Ro*Tel diced tomatoes & green chilis
i shred the chicken with a fork, because it's normally in very large chunks.

you literally throw everything into a pot! bring it to a boil, reduce heat, & simmer 10 minutes stirring occasionally. if you like things a little spicy, try adding some Tony's creole seasoning. but if you use Tony's, don't add extra salt. 

you can also cook this in a crockpot on low for 4-6 hours. we normally do it in the crockpot on weekdays if we remember to throw everything in it in the mornings. it tastes better because the flavors mix together for longer. but it's delicious either way! enjoy!

    Have you ever made your own chicken stock? I just did last week and it turned out great. Plus, I used a whole chicken to make the stock and I saved all the meat off of it to. I will still buy the store stock too but I had no idea how cheap it was to make your own.

  4. White chicken chili always look SO good! Steven doesn't like beans so I wouldn't be able to make this for him but I'd love to make it for me sometime! :)

  5. Okay, soups like this are the best!!! (I love cooking, but sometimes you just need something you can literally throw together!) I've never had chicken chili before, but it sounds really good and super hearty!

  6. haha! i agree - sometimes you just need a "dump into a pot" soup! :) this is very good & hearty! although it's a little spicy, so if you don't like spice - skip the rotel!

  8. Is the rotel super spicy? I've never used it, but I can't take a lot of heat....Medium salsa is probably my max tolerance!

  9. We use the mild but it can still get spicy after a few bites. You could probably get some without the green chiles or drain the juice out too!

  10. Draining the juice is a good idea!!! I could reserve it so that people could use it to doctor their bowls up!
