chicken & vegetable nicoise


this is probably one of my favorite meals ever! my parents gave me & my sister a cookbook of their favorite recipes for Christmas 2012 & i was so glad this one was in it! it's pretty healthy & super delicious. my husband & i made it last weekend & i have been dying to share it! it takes a little bit of "prep" time, but it is worth it! my husband & i are actually starting whole30 today (which is one of the things on my 30 by 30 list) so i wanted to mention that this meal is whole30 approved if you leave out the pasta!


ingredients:
4 chicken breasts (thin sliced)
4 small zucchinis
1/2 red onion
baby tomatoes
8oz green beans
1 tsp minced garlic
6tsp olive oil
1/2 tsp fresh lemon juice
8oz angel hair pasta, cooked


step 1: combine vegetables & garlic in a bowl. toss with 4tsp olive oil, salt and pepper.
step 2: take a large, heavy piece of aluminum foil (about 18 inches long) and fold in half. place the chicken breast in the center of the foil. brush with olive oil & sprinkle with lemon juice, salt and pepper. surround with seasoned vegetables.
step 3: fold foil over chicken & vegetables. crimp edges together to make a tightly sealed packet. place all 4 packets on a baking sheet & bake at 350 degrees in the center of the oven for 20-25 minutes.
step 4: serve chicken & vegetables atop pasta (or not if you're on whole30). enjoy! :)
