whole 30 // thai chicken & broccoli



one of the things on my 30x30 list is to complete whole30 with my husband. my word for this year is balance & one thing that desperately needs balance is our diet. i've done whole30 before & liked the habits it instills, so my husband has decided to do it with me this time around! i'm excited because i think it will be nice to have someone to be accountable to.

to give a back story, the first time i did whole 30, i got sent on a business trip my last week & didn't get to finish the full 30 days. this time, Thomas & i planned and started on January 13th & that same day i found out i was going on another business trip (which was last week). with all of the unknowns about travel & schedules, it wasn't practical to try so, we started over when we got back from the trip & are on day 2 of our whole 30!

this is one of our favorite recipe finds since doing whole 30. it tastes a little coconut-y but it is delicious & that is coming from someone who doesn't like coconut flavor! enjoy!


Thai Chicken and Broccoli

ingredients
2 lbs chicken breast (cut into bite size pieces)
1 tbsp coconut oil
4 cups broccoli florets
1 cup canned coconut milk
1/2 tsp sea salt
1 tsp garlic powder
2 tsp curry powder
1 tsp smoked paprika

instructions
o1 // heat pan on medium. add coconut oil & brown chicken on all sides
o2 // add broccoli, milk, & all spices to the pan
o3 // cook on low for 15 minute or until chicken is thoroughly cooked

  1. Thai food is my absolute favorite! My uncle actually gave us a bunch of different Thai curries along with a cookbook and I've been in love. This looks amazing, though! Curry + broccoli + chicken? That's pretty much three of my favorite things in one plate! :)

  3. Mm this sounds so good! Thai is my go-to takeout but I love to cook Whole30-friendly at home and know exactly what's going into the dish. This looks like an easy weekday recipe! Have you ever made cauliflower rice to go with it?

  4. it is really delicious! ya know, i have a recipe for cauliflower rice, but haven't made it yet! i just may have to make these two together cause that sounds like a delicious combo!! thanks for the tip, Alicia!! :)
