spicy black bean burgers

we have been trying to have a "meat free" dinner once a week just to cut down on meat. one of our favorite vegetarian meals is spicy black bean burgers. my husband doesn't really care for black beans, but he loves these black bean burgers. so that says something. we both like spicy foods so we love the spice that these have. plus, we top our burgers with guacamole and they are so tasty!


Spicy Black Bean Burgers
makes 4

Ingredients
1 (16 oz) can of black beans, drained & rinsed
3 cloves garlic, minced
1 egg
small handful of cilantro, chopped
1 tsp chili powder
1 tsp cumin
1 tsp onion powder
1 cup panko bread crumbs
2 tablespoons of olive oil
(optional) a few red pepper flakes

Instructions
1) mash the black beans & mix in the garlic
2) in a separate bowl, combine the egg, cumin, onion powder, chili powder, and cilantro
3) add the mixture to the beans & also add in 1/2 cup of panko crumbs - mix well
4) form 4 patties and coat with the remaining panko crumbs
5) heat oil in a skillet on medium heat and brown patties on both sides
6) serve on a whole wheat bun and top with guacamole

  2. Yummm! I love veggie burgers... I think more than real burgers. I have no idea why because I'm definitely a steak and potatoes kind of girl. I'll definitely have to try this out! Now that I'm done with Whole30 I'm starting to add meatless nights into our rotation - tonight's our first night with a spicy black bean burrito bowl. I don't know how the husband's going to feel about it so wish me luck!

  4. i like them more than real burgers too!!! but i've never been a huge beef fan! oh awesome!! a burrito bowl sounds delish!! that's what i'm making for lunch this week! :)

  7. I love black bean burgers! Mine are even easier - its just ketchup, mustard, oats & seasonings with black beans & then put them in the oven... YUMMY!!! I love cumin in mine - makes them like a chili burger!

  15. I tried black bean burgers for the first time not too long ago and they were delicious! I can't remember where I found the recipe, but it was similar to this one. Definitely going to have to have them again!
